JAMIE’S PEACH CARAMEL UPSIDE-DOWN CAKE
An upside-down cake looks like a challenging, fancy dessert to make
but it's actually quite simple. Using fresh peaches (or nectarines, or apricots or plums!) creates an unforgettable dessert that is simply delicious…perfect for entertaining friends or for Sunday Supper dessert.

For the Caramel:
6 tablespoons unsalted butter, plus additional for coating the pan
1 cup granulated sugar
4 large or 6 small fresh peaches, halved and pitted
(or nectarines, apricots or plums)

RISOTTO ALL’AMARONE, PRUNES, CRUSHED AMARETTI

I saw red wine used to make risotto for the first time when we were working at La Crota, near Alba. RISOTTO AL BAROLO is a classic dish in which Barolo, a full-bodied red wine, is used instead of the more traditional white wine. For my dish, I’ve chosen another full-bodied red wine, Amarone, because its lush, ripe flavor works so well with the prunes and amaretti.

SERVES 4–6

2 tablespoons grape seed oil
1 cup coarsely chopped onions
2 cups carnaroli rice

AFTER DINNER VODKA ESPRESSO SHOTS

2 ounces Vodka
1 ounce Kahlua
2 ounces cold espresso

Rub the rims of two shot glasses with the oil from an orange rind and dust them with cocoa powder. Shake the ingredients well with ice and strain into the shot glasses.

12 ounces cooked albacore, flaked (or 2 cans, drained and flaked)

1 cup Panko bread crumbs or cornflake crumbs or crushed saltines

2 eggs, beaten

2 tablespoons fresh lemon juice

2 tablespoons fresh herbs, finely chopped (parsley, dill, basil and chives)

Salt and pepper

1/4 cup canola oil

Lemon Horseradish Mayonnaise

1 cup mayonnaise

2 tablespoons fresh lemon juice

1 tablespoon prepared horseradish

1 teaspoons fresh thyme leaves, chopped

APPLE PIE A LA MODE COCKTAIL

1 part apple schnapps

1 part vodka

1 part maple syrup

1 part Navan (Vanilla Cognac), Ginger Liqueur, or Vanilla Liqueur

2 parts heavy cream

Place apple schnapps, vodka and maple syrup into a martini shaker filled with ice. Shake and strain into a martini glass to about a half inch from the rim.

Place the Vanilla or Ginger Liqueur and heavy cream into the same shaker.

28 cups sliced, peeled apples (Granny Smith, Golden Delicious, Rome, or Northern Spy work well. Avoid McIntosh and Red Delicious as they get Mealy)
1/2 teaspoon nutmeg
4 1/2 cups granulated sugar
1 teaspoon sea salt
1 cup cornstarch
10 cups water
2 teaspoons cinnamon
3 tablespoons lemon juice
3 tablespoons vanilla paste

4 pounds small red potatoes
1/2 pound applewood-smoked bacon
1 cup mayonnaise
3 tablespoons barbecue sauce
2 tablespoons spicy mustard
2 tablespoons sherry wine vinegar
3 celery ribs, diced
1/4 cup freshly chopped parsley
Salt and freshly ground pepper
