In Italy, Carnevale is the last celebration before lent begins on Ash Wednesday. These light as air Fried Ricotta Puffs, or fritters, are often eaten to celebrate Carnevale, but they make a sweet treat all throughout Spring and Easter celebrations. I find it best to keep them fairly small to ensure that they cook through. Lightly dust them with powdered sugar, or drizzle them with honey.
