SLOW COOKER ROASTED GARLIC MASHED POTATOES

Ingredients

  • 5 pounds Yukon Gold potatoes, cut into 2-Inch pieces
  • 1 cup whole milk
  • 1 cup half & half
  • 2 cups chicken or vegetable broth
  • 12 peeled garlic cloves
  • 1 stick unsalted butter
  • 1/2 cup crème fraiche
  • Salt & freshly ground pepper

Directions

  1. Place the potatoes, milk, broth and garlic cloves in a slow cooker, with the garlic sitting on top. Season liberally with salt and pepper. Cover and cook for 4-5 hours on high or 7-8 hours on low. When the potatoes are very tender, add the butter and crème fraiche and mash directly in the bowl of the slow cooker (you can also use an electric mixer, but do not over mix!). Taste and adjust seasoning and serve.
