CHEDDAR CHEESE DIP WITH SOFT PRETZELS

Ingredients

  • 4 cups (1 lb.) mild cheddar cheese, shredded
  • 1 cup Pale Ale
  • 3 tablespoons unsalted butter (softened)
  • 3 tablespoons all-purpose flour
  • 4 cups whole milk or heavy whipping cream
  • 1/2 tsp. sherry vinegar
  • 3/4 tsp. freshly squeezed lemon juice
  • Salt and white pepper, to taste

Instructions

  1. Reduce the pale ale by half and keep warm. Heat the cream in a heavy bottomed pot over medium heat. In a separate pan, make a roux using the butter and all purpose flour, cooking it over medium-low heat until it is a smooth texture. This will take approximately 5 minutes while stirring constantly.
  2. Add the reduced pale ale and the roux to the heated cream, stirring constantly, and continue to cook until the mixture is thickened (about 5 minutes).
  3. Slowly whisk in all the shredded cheddar until smooth and fully incorporated, and then add the sherry vinegar, lemon juice, and salt, and white pepper to taste.
  4. Serve the dip warm with soft pretzels that have been warmed.
