BLENDER GAZPACHO
Ingredients
- 1 pound ripe tomatoes, seeded & chopped
- 1/4 of a small red onion or 1 large shallot, peeled
- 1 cucumber – peeled, seeded & diced
- 1 small red bell pepper, seeded & chopped
- 1 garlic clove, peeled
- 1 cup tomato juice
- 1/4 cup extra-virgin olive oil
- 1/4 cup Sherry Wine vinegar or red wine vinegar
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon Worcestershire sauce
- 1 teaspoon ground cumin
- Salt & freshly ground pepper
Instructions
- Working in batches, combine the tomatoes, onion or shallot, bell pepper, garlic, tomato juice, olive oil, vinegar, Worcestershire sauce, cumin, and salt and pepper in your Kalorik Personal Sport Blender…Or, combine the ingredients in the mixing cup and use your Kalorik Hand Blender. Blend the ingredients until smooth.
- Chef’s Tip: Garnish with crispy prosciutto, diced avocado, grilled shrimp, croutons, lump crab, charred corn, slivered toasted almonds, a spoonful of sour cream or yogurt, green onions, diced onions, diced cucumber…the list goes on!
