BROWN SUGAR CARAMELS

I love chewy caramels and this homemade version is the best ever!
Ingredients
- 1 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 4 ounces unsalted butter, at room temperature
- 1/2 cup whole milk
- 1/2 cup whipping cream
- 1/2 cup light corn syrup
- 1 teaspoon pure vanilla extract
Instructions
- In a heavy saucepan, combine all of the ingredients except the vanilla. Cook over low heat until the sugar is dissolved, about 20 minutes.
- Increase the heat to medium and continue cooking until a candy thermometer reaches 248°F…but Do Not Stir! Swirl the pan every so often, until you reach the desired temperature. Remove the pot from the heat and stir in the vanilla.
- Butter a 13x9-inch pan and pour the caramel into the pan. Top with a sprinkling of sea salt, if desired. Cool completely, then cut into 1-inch squares and wrap individually with wax paper.
