CHEDDAR CHEESE DIP WITH SOFT PRETZELS

Ingredients
- 4 cups (1 lb.) mild cheddar cheese, shredded
- 1 cup Pale Ale
- 3 tablespoons unsalted butter (softened)
- 3 tablespoons all-purpose flour
- 4 cups whole milk or heavy whipping cream
- 1/2 tsp. sherry vinegar
- 3/4 tsp. freshly squeezed lemon juice
- Salt and white pepper, to taste
Instructions
- Reduce the pale ale by half and keep warm. Heat the cream in a heavy bottomed pot over medium heat. In a separate pan, make a roux using the butter and all purpose flour, cooking it over medium-low heat until it is a smooth texture. This will take approximately 5 minutes while stirring constantly.
- Add the reduced pale ale and the roux to the heated cream, stirring constantly, and continue to cook until the mixture is thickened (about 5 minutes).
- Slowly whisk in all the shredded cheddar until smooth and fully incorporated, and then add the sherry vinegar, lemon juice, and salt, and white pepper to taste.
- Serve the dip warm with soft pretzels that have been warmed.
