CHEF JAMIE'S CORNBREAD

A sinfully moist cheesy corn bread with a slight spice of Jalapeno.

Ingredients

  • 3/4 cup cornmeal
  • 1 1/2 cups AP Flour
  • 1/2 cup Sugar granulated
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup sharp cheddar cheese grated
  • 2 tsp. minced jalapeno chilies
  • 1 cup Corn kernels
  • 3 Tbsp. cilantro chopped
  • 1 cup buttermilk
  • 2 eggs
  • 4 Tbsp. butter melted

Instructions

  1. Preheat the oven to 400 degrees. In a large bowl, combine the first 10 ingredients (cornmeal through cilantro). In a separate bowl, whisk together liquids and slowly stir the liquid mixture into the dry ingredients. Mix until well combined.
  2. Spray an 8x8" baking pan with non-stick cooking spray and pour in the batter. Bake for 20-25 minutes or until golden brown and springs back when touched.
