CHERRY MINT MOJITOS

Celebrate a sweet summer with this perfect pitcher cocktail.

Ingredients

  • 3/4 cup granulated sugar
  • 3/4 water
  • 1/2 cup fresh mint leaves
  • 3/4 cup freshly squeezed lime juice
  • 1 1/2 pounds fresh cherries, pitted and halved
  • 12 ounces (1 1/2 cups) Vodka
  • 1 bottle sparkling water (750 ml)

Instructions

  1. Combine the sugar, water, and mint leaves in a small saucepan, stirring until the sugar dissolves. Remove the simple syrup from the heat, strain the mint leaves out and discard, and let the syrup cool completely. (The Mint Simple Syrup can be refrigerated in an airtight container for 2 weeks.)
  2. Place the lime juice in a large pitcher or jar. Add the cherries and the simple syrup and stir to combine. Refrigerate the mixture for at least 3 hours or up to overnight.
  3. To serve, add the vodka to the pitcher and stir to combine. Fill 8 glasses with ice. Ladle 1/2 cup of the cherry vodka mixture into each glass. Top each glass off with sparkling water.
