COCONUT JASMINE RICE

Ingredients
- 2 tablespoons coconut oil
- 1 1/2 cups jasmine rice
- 2 cups water
- 1 can (14 ounces) unsweetened coconut milk
- 2 teaspoons granulated sugar
- Salt & freshly ground pepper
- Toasted Coconut, for garnish
Instructions
- Heat the coconut oil in a small pot with a lid. Add the rice and sauté, stirring often, until the rice is fragrant, about 2 minutes.
- Add the water, coconut milk, sugar, salt and pepper. Bring the mixture just to a boil, reduce the heat to simmer, then cover the pot. Simmer for 15 to 20 minutes, or until the liquid has been absorbed by the rice. Check the rice to determine the doneness. When the rice is done, turn off the heat and cover the top of the pot with a kitchen towel, then replace the lid and allow the rice to stand for 5 minutes more. Serve garnished with toasted coconut.
