COFFEE & CREAM GRANITA

Inspired by Lidia Bastianich’s famous recipe, this “shaved ice” is for true coffee lovers.

Ingredients

  • 4 cups dark brewed coffee
  • 1/2 cup granulated sugar
  • Pinch of salt
  • 1 cup heavy cream, whipped to soft peaks

Instructions

  1. Brew the coffee, and while it is still hot, add the sugar and a pinch of salt. Stir well to dissolve and add more sugar, to taste. Cool the coffee mixture to room temperature.
  2. Pour the mixture into a 13 by 9-inch pan, and place in the freezer. When ice crystals begin to form, about 1 hour later, remove the pan from the freezer and use a fork to stir the ice crystals. Return the pan to the freezer and scrape the ice crystals again 30 minutes later. Freeze again, scraping the ice crystals 30 minutes later. Then allow the Granita to freeze until no liquid appears.
  3. To serve, scrape the Granita using a fork and spoon the Granita into small martini glasses. Top with whipped cream.
