CREAMY CHIPOTLE HUMMUS

I love this smoky delicious dip, full of garlic and heat from the chipotles. Chipotles are dried smoked jalapenos that come packed in a can of adobo sauce. Tahini, the sesame seed paste that gives hummus its distinctive flavor, along with the chipotles in adobo sauce can be found in the ethnic section of your local grocery store. Try serving your homemade hummus with toasted pita chips or bagel chips and an assortment of crunchy vegetables, such as baby carrots, cucumber, zucchini slices or snow peas.
Ingredients
- Two 15-ounce cans garbanzo beans
- 1/2 cup reserved liquid from a can of garbanzo beans
- 1/4 cup tahini
- 4 tablespoons fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 2 teaspoons adobo sauce from a can of chipotle chilies (or to taste)
- 1 large garlic clove, minced
- 1 teaspoon ground cumin
- Salt and white pepper
- 1/2 cup toasted pine nuts
Instructions
- Drain the garbanzo beans, reserving 1/2 cup of the liquid from the cans. In a food processor combine the drained garbanzo beans, the 1/2 cup of reserved liquid, tahini, lemon juice, olive oil, adobo sauce, garlic and cumin. Puree the mixture until smooth then season with salt and pepper. (The hummus can be made a day ahead, covered and refrigerated until ready to serve. Bring the hummus to room temperature before serving.)
- To serve, transfer the hummus to a serving bowl and make a small well in the center of the hummus using the back of a teaspoon. Fill the well with a tablespoon of olive oil and garnish the hummus with the toasted pine nuts and freshly chopped parsley.
