EASY BOLOGNESE SAUCE

Ingredients

  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 carrot, grated
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 3/4 pound ground beef
  • One 28-ounce can of crushed tomatoes in puree
  • 1/2 cup whole milk
  • 1 dried bay leaf
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • Salt and white pepper

Instructions

  1. Heat the butter and oil in a large saucepan over medium heat. Add the carrot and onion and sauté until tender, about 5 minutes. Add the garlic and sauté 1 minute more. Add the ground beef and cook, stirring often, for 5 minutes.
  2. Add the tomatoes and their liquid, crushing them with the back of a large spoon. Stir in the milk, bay leaf, thyme, nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Simmer the sauce for 20 minutes. Remove the bay leaf and taste to adjust the seasoning.
