GREEN OLIVES WITH SPICY BREAD CRUMBS

Sunday lunch in Rome means big family gatherings at the neighborhood trattoria. The meal often begins with an assortment of antipasti, served family style. Roasted peppers, baked eggplant, warm slices of frittata, sauteed zucchini, fresh mozzarella, marinated anchovies, little meatballs, and pickled vegetables are among the more common offerings. At Sant'lgnazzio my favorite trattoria, it also included warm sauteed green olives with a spicy bread crumb.
Ingredients
- 1/4 cup extra virgin olive oil
- 2 Tbsp. fresh chopped parsley
- 1 garlic clove minced
- Pinch crushed pepper
- 2 cups green olives such as Sicilian, drained, rinsed, and patted dry
- 1 Tbsp. red or white vinegar
- 1 cup plain dry bread crumbs.
Instructions
- In a medium skillet over medium heat, add the oil with the parsley, garlic, and red pepper and cook until fragrant. Add the olives to the pan with the vinegar and cook while stirring until the olives are warm and the vinegar evaporated about three minutes.
- With a slotted spoon, transfer the olives to a serving bowl.
- Add the breadcrumbs to the pan and cook while stirring constantly, until evenly toasted about three minutes. Toss the olives with the bread crumbs and serve warm.
