GRILLED ANGEL FOOD CAKE WITH FRUIT SALSA

GRILLED ANGEL FOOD CAKE WITH FRUIT SALSA

Be sure to watch the angel food cake very carefully when grilling….Don't walk away from the grill, as it browns very quickly!

Ingredients

  • 1 14-ounce angel food cake
  • 1/2 cup melon, diced
  • 1/2 cup strawberries, diced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 3 tablespoons granulated sugar
  • Juice of half a lime
  • 1/4 cup fresh mint, cut into thin strips
  • For the Raspberry Sauce
  • 2 cups fresh raspberries
  • 1/4 cup Chambord or Grand Marnier
  • 3 tablespoons granulated sugar (or more, to taste)
  • Juice of half a lemon

Instructions

  1. Heat your barbecue to medium-high. In a mixing bowl, combine all of the fruit, the sugar, lime juice and mint and mix well. Set aside. To make the Raspberry Sauce, puree all of the ingredients in a food processor or blender. Strain the sauce to remove the seeds. Store in the refrigerator until ready to use. To serve, slice the cake in half horizontally and place both sides, cut side down, on the grill. Grill for 30 to 60 seconds or until golden brown and toasted. Place one half of the cake, grilled side up on a plate or cake stand. and drizzle with Raspberry Sauce. Place the other part of the cake on top, grilled side up and fill the center of the cake with the fruit salsa. Cut slices and serve, garnished with extra Raspberry Sauce.
