GRILLED BLUE CHEESE & BACON STUFFED MUSHROOMS

I’ve been on a mushroom kick lately, and these grilled bites are killer! Prepare the filling in advance and stuff the mushrooms the morning of your get-together. They’re the perfect appetizer to put throw on the BBQ while you pour Sangria for all your friends (it’s the Summer of Sangria!).
Ingredients
- 16 large white button mushrooms
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon unsalted butter
- 1/2 small sweet yellow onion, diced
- 2 garlic cloves, finely chopped
- 1 cup Panko bread crumbs
- 4 ounces of crumbled blue cheese
- 3 strips of bacon - cooked, cooled, and crumbled
- 2 tablespoons freshly chopped parsley
- A dash of hot sauce
- Salt & pepper, to taste
Instructions
- Using a damp kitchen towel, wipe the mushrooms of any dirt. Carefully remove the stems. Trim the bottom of each stem and discard the very bottom part, then chop the stems finely.
- Heat the oil and butter in a large skillet over medium heat. Add the onion and sauté until tender, about 10 minutes. Add the garlic and chopped mushroom stems. Sauté the mixture until golden brown and dry, then season with salt and pepper.
- Remove the pan from the heat and mix in the Panko bread crumbs, blue cheese, bacon, parsley, and hot sauce.
- Fill the mushroom caps with the cheese mixture and brush each entire stuffed mushroom with olive oil. Grill the stuffed mushrooms over medium heat until the mushrooms are tender and the cheese is melted.
