Ingredients
- 1 lemon wedge
- 1/4 cup fine decorating sugar
- 1 sugar cube
- Dash of pomegranate juice for each glass
- Chilled champagne or other sparkling wine or sparkling cider
- Pomegranate Arils for garnish
SUGARED BACON
- 18 thick slices (about 1 pound) of bacon
- 1/2 cup firmly packed golden brown sugar
- 2 tablespoons mild mustard
Instructions
FOR THE DRINKS:
- Rub the rims of champagne flutes with the lemon wedge, then dip the rims into decorating sugar.
- Put a sugar cube into each flute. Pour in the pomegranate juice, then pour in the champagne, sparkling wine, or cider to fill the glass. Garnish each glass with a few pomegranate arils.
FOR THE SUGARED BACON GARNISH:
- In a large skillet or griddle over medium heat, fry bacon, turning once, until it just begins to become crispy. Transfer to paper towels to drain.
- In a small bowl, stir together the brown sugar and mustard. Return bacon to skillet or griddle and reduce heat to low. Brush the sugar mixture over the bacon and continue to cook, turning once, until the bacon is well-browned and firm. Serve immediately. Do not cover bacon to keep it warm, or it will become sticky. But it will hold in a 250-degree oven for an hour or so until serving. Makes 6 servings.
