LEMON BUTTERMILK PIE

I have never met anyone who did not fall in love with this delicious, old-time dessert. No need for an electric mixer or fancy equipment; a large mixing bowl and some elbow grease will do the trick! Plan ahead for your Labor Day BBQ and have dessert waiting for you… Trust me, they’ll love it!

Ingredients

  • 2 1/2 cups granulated sugar
  • 6 tablespoons all-purpose flour
  • 8 large eggs, lightly beaten
  • 8 ounces unsalted butter, melted
  • 16 ounces buttermilk
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons freshly grated lemon zest
  • 4 tablespoons lemon juice
  • 2 pie shells, homemade and prebaked or store-bought

Instructions

  1. Preheat the oven to 325°F.
  2. In a large mixing bowl, whisk together the sugar and flour. Add the beaten eggs gradually, incorporating well after each addition. Slowly add the melted butter and whisk to combine. Whisk in the remaining ingredients and pour into the prepared pie shells. Bake for 25 to 30 minutes or until just set.
  3. Serve the pie with a dollop of freshly whipped cream (unsweetened!) or a spoonful of raspberry sauce and fresh mint for garnish.
