LEMON GREEK YOGURT POUND CAKE

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup 2% plain Greek Yogurt
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons freshly grated lemon zest
  • 2 teaspoons + 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil

Instructions

  1. Preheat the oven to 350ºF. Grease standard sized loaf pan. Line the bottom with parchment paper. Grease and flour the pan.
  2. Sift together the flour, baking powder, and salt into a small mixing bowl. In another bowl, whisk together the yogurt, 1 cup of the sugar, the eggs, lemon zest, 2 teaspoons of the lemon juice and vanilla. Slowly whisk the dry ingredients into the wet ingredients. Add the oil and whisk the batter until well combined. Pour the batter into the prepared pan and bake for 45 minutes, or until a skewer comes out clean.
  3. Meanwhile, combine the remaining 1/4 cup lemon juice and remaining 1/4 cup sugar in a small saucepan. Stir over low heat until the sugar dissolves. Set aside to cool.
  4. Let the cake rest for 15 minutes after baking, then pour the lemon juice/sugar mixture over the cake. Let the cake cool to room temperature.
