Instructions
- Preheat the oven to 400ºF. Place all of the ingredients except the chocolate chips in a blender. Blend the mixture until completely smooth, about 1 minute, scraping down the sides of the blender once during blending. Transfer the batter to a mixing bowl and stir in the carob chips.
- Grease a standard-sized muffin tin with cooking spray and spoon or scoop the batter into the muffin tins, filling the cups three-quarters full. Bake for 14 to 15 minutes or until the muffins have set.
