RED & GREEN CHRISTMAS SALAD

This mouthwatering salad is vibrant with color and flavor.
Ingredients
- 8 cups spinach leaves, stems removed
- 3/4 cup dried cranberries
- 3/4 cup pecan halves, toasted
- 1/2 cup crumbled blue cheese
- Warm Champagne Dressing (recipe follows)
WARM CHAMPAGNE DRESSING:
- 1/4 cup champagne vinegar
- 1 tablespoon honey or granulated sugar
- 1 teaspoon Dry Vermouth
- 1 teaspoon Dijon mustard
- 1 tablespoon heavy cream
- 1 cup good quality olive oil
- Salt & pepper, to taste
Instructions
- Toss the spinach leaves, cranberries, and pecans in a large mixing bowl.
- Prepare the warm dressing. Toss the salad with enough dressing to lightly coat the greens and serve immediately.
- FOR THE DRESSING: Combine the vinegar, sugar, Vermouth, and mustard in a small saucepan. Bring to a simmer. Gradually whisk in the cream and the olive oil in a steady stream. Season with salt & pepper. Remove from the heat and dress the salad immediately.
