ROASTED GARLIC & BALSAMIC MARINADE FOR SUMMER GRILLING

Perfect for steaks, beef kabobs, chicken and pork, this marinade is my go-to flavor booster for the summer! You can make a double batch and keep it in the fridge for up to 2 weeks.

Ingredients

  • 1/2 cup balsamic vinegar
  • 1/2 cup Dry Sherry
  • 1/4 cup olive oil
  • 6 garlic cloves
  • 2 shallots
  • 2 sprigs fresh rosemary, leaves removed
  • 4 sprigs of fresh thyme, leaves removed
  • 1 tablespoon kosher salt
  • 1 teaspoon cracked black pepper

Instructions

  1. To roast the garlic and shallots, place the peeled garlic cloves and peeled shallot bulbs on a large sheet of aluminum foil. Drizzle with a bit of olive oil and season with salt and freshly cracked pepper. Pull the sides of the aluminum foil up to create a packet, pressing firmly at the top to create a “purse”, and roast at 350ºF for 30 to 45 minutes or until the shallots and garlic cloves are tender and caramelized.
  2. Combine all of the ingredients in your blender or food processor and pulse to combine. Pour the mixture into a zip-lock bag, add your protein of choice and marinate for at least 1 hour and up to 24 hours, for the best flavor.
