ROASTED GARLIC & BALSAMIC MARINADE FOR SUMMER GRILLING
Ready in: 50 MinTotal time: 50 Min
Perfect for steaks, beef kabobs, chicken and pork, this marinade is my go-to flavor booster for the summer! You can make a double batch and keep it in the fridge for up to 2 weeks.
Ingredients
- 1/2 cup balsamic vinegar
- 1/2 cup Dry Sherry
- 1/4 cup olive oil
- 6 garlic cloves
- 2 shallots
- 2 sprigs fresh rosemary, leaves removed
- 4 sprigs of fresh thyme, leaves removed
- 1 tablespoon kosher salt
- 1 teaspoon cracked black pepper
Instructions
- To roast the garlic and shallots, place the peeled garlic cloves and peeled shallot bulbs on a large sheet of aluminum foil. Drizzle with a bit of olive oil and season with salt and freshly cracked pepper. Pull the sides of the aluminum foil up to create a packet, pressing firmly at the top to create a “purse”, and roast at 350ºF for 30 to 45 minutes or until the shallots and garlic cloves are tender and caramelized.
- Combine all of the ingredients in your blender or food processor and pulse to combine. Pour the mixture into a zip-lock bag, add your protein of choice and marinate for at least 1 hour and up to 24 hours, for the best flavor.
