SMOKED SALMON TARTAR

Ingredients
- 1/2 pound thinly sliced smoked salmon or lox
- 3 tablespoons extra virgin olive oil
- 1 tablespoon capers, drained and chopped
- 1 teaspoon freshly grated lemon zest
- 2 teaspoons freshly squeezed lemon juice
- 3 tablespoons freshly minced chives
- 1 tablespoon fresh thyme leaves
- Freshly ground black pepper
- Potato chips, French bread crostini or crackers for serving
Instructions
- On a cutting board, stack the salmon slices, then cut the slices into 1/4-inch cubes. In a mixing bowl, combine the diced smoked salmon, olive oil, capers, lemon zest, lemon juice, chives, and thyme. Season with pepper to taste.
- Spoon the tartar into a small bowl or ramekin and refrigerate for at least 1 hour to allow the flavors to meld and the tartar to chill.
- To serve, invert the smoked salmon onto a serving plate and surround it with potato chips, crackers, or crostini.
