SUMMER DESSERT SOUP

This sweet and succulent fresh fruit puree is a refreshing first course, a palate cleanser, or for dessert with a scoop of Pineapple Sherbet.
Ingredients
- 2 medium Hawaiian papayas or 1 Mexican papaya, peeled and cut into chunks
- 1 large mango, peeled and cut into chunks
- 4 cups pineapple juice
- 1/4 cup freshly squeezed lime juice
- Pinch of salt
FOR GARNISH:
- 6 strawberries, diced
- 1/2 mango, diced
- 1/4 cup fresh mint, cut into thin strips
Instructions
- Place the papaya, mango, pineapple juice, lime juice, and salt in your food processor or blender. Puree until silky smooth. Chill thoroughly.
- To Serve: Pour the chilled soup into chilled soup bowls. Garnish each bowl with diced strawberries, diced mango, and mint.
- Chef's Note: Try sprucing up your Fruit Soup by mixing a tablespoon or two of Tequila or Vodka into each bowl of soup.
