SUMMER TOMATO AND GOAT CHEESE GRATIN

Summer’s ripe tomatoes pair with tangy goat cheese and textural panko crumbs for this simple side dish, delicious served alongside chicken or pork.

Ingredients

  • 4 teaspoons good quality olive oil
  • 2 pounds ripe tomatoes, cored and cut into 1-inch chunks
  • 1-pint cherry tomatoes
  • 8 ounces of soft goat cheese
  • 4 ounces Panko crumbs
  • 2 ounces grated Parmesan cheese
  • Salt and freshly ground pepper

Instructions

  1. Preheat the oven to 375°F. In a large sauté pan, heat 2 teaspoons of the olive oil over medium heat. Add the chopped tomatoes and sauté for 5 minutes, or until the tomato liquid has almost evaporated, stirring occasionally. Add the cherry tomatoes and sauté for 2 minutes more. Season with salt and pepper.
  2. Spoon half of the tomatoes into a 2-quart baking dish and crumble half the goat cheese on top. Repeat with the remaining tomatoes and cheese.
  3. Combine the Panko crumbs and Parmesan cheese in a small mixing bowl. Scatter the crumb mixture over the tomatoes and cheese. Bake until the crust is golden and the cheese is bubbly, about 20 minutes.
