- Grilling fruit is quick and easy and makes a great addition to every grilled meal, either as an accompaniment to meat (think pork with grilled peaches) or as a delectable dessert (think brown sugar glazed pineapple). Grilling causes the sugars in the fruit to caramelize, creating new smoky concoctions that remind you how decadent fruit can be. And always brush whatever fruit you’re grilling with a little bit of olive oil or melted butter. The fat adds another element to the flavor profile and keeps the fruit from sticking to your grill grates.
- For a sweet affair or gorgeous desserts, experiment with the season’s best fruit on the grill. When choosing your fruit, go for ripe but not soft or mushy fruit, for better texture.
- Peaches are a classic. Simply halve, brush with olive oil, and grill until there are great grill marks and a smoky flavor imparted. Serve the grilled peaches with chicken or dice them into salsa with jalapeno and red onion. For dessert, brush the cut side of the peaches with melted butter and dip in brown sugar, then grill to perfection. You can grill just about any stone fruit, such as plums or apricots and consider adding vanilla paste or dried spices for another level of complexity. Serve sweet grilled fruit with ice cream, whipped cream, or a dollop of crème fraiche, for a simple summer dessert.
- Or, cut a ripe pineapple in half or in quarters the long way, so that the core is still intact and place on the BBQ until there are grill marks. Season with black pepper, fresh lime juice and honey and pair with pork chops or grilled pork tenderloin.
- More ideas…Combine a handful of your favorite berries with a sprinkling of sugar and a drop of almond extract in a foil packet and put it directly on the grill. Wait 5 minutes, then carefully dump the fruity goodness over a grilled pound cake or a big bowl of ice cream.
- And finally, no matter the season, slice open a banana lengthwise but leave it in its peel. Grill with the open side down for 2 minutes. Flip the banana over and add chopped dark chocolate or Nutella, a mixture of brown sugar and cinnamon, marshmallow with graham crackers and chocolate, or crumbled Nilla wafers into the seam in the banana. Close the grill and cook for a few minutes more. Now that’s a killer dessert!
