THE SIMPLEST APPLE CRISP

Honeycrisp apples are my all-around best pick for eating out-of-hand and baking with this season. You can easily add chopped nuts or even crumbled, crisp bacon to the topping mixture.

Ingredients

  • 3 pounds Honeycrisp apples (or your favorite baking apple)
  • Zest and juice of 1 lemon
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla paste (or extract)
  • 1 teaspoon ground cinnamon
FOR THE TOPPING:
  • 1/2 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon kosher salt
  • 1 stick cold unsalted butter, diced

Instructions

  1. Preheat the oven to 350ºF. Butter an 8x8-inch baking dish or a large, round pie dish.
  2. Peel, core, and cut each apple into 8 slices. Combine the apples with the lemon zest and juice, sugar, vanilla, and cinnamon. Pour the mixture into the prepared baking dish.
  3. To make the topping, combine the oats, flour, both sugars, salt, and cold butter in a large mixing bowl. Using your fingers or a pastry cutter, tenderly work the mixture together until the butter is the size of small peas strewn throughout the dry mixture. Scatter the topping evenly over the apples.
  4. Place the crisp on a sheet pan and bake for 45 minutes or until the top is golden brown and the apple mixture is bubbly. Serve warm.
