THE SIMPLEST APPLE CRISP

Honeycrisp apples are my all-around best pick for eating out-of-hand and baking with this season. You can easily add chopped nuts or even crumbled, crisp bacon to the topping mixture.
Ingredients
- 3 pounds Honeycrisp apples (or your favorite baking apple)
- Zest and juice of 1 lemon
- 1/2 cup granulated sugar
- 1 teaspoon vanilla paste (or extract)
- 1 teaspoon ground cinnamon
FOR THE TOPPING:
- 1/2 cup rolled oats
- 3/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup dark brown sugar
- 1/2 teaspoon kosher salt
- 1 stick cold unsalted butter, diced
Instructions
- Preheat the oven to 350ºF. Butter an 8x8-inch baking dish or a large, round pie dish.
- Peel, core, and cut each apple into 8 slices. Combine the apples with the lemon zest and juice, sugar, vanilla, and cinnamon. Pour the mixture into the prepared baking dish.
- To make the topping, combine the oats, flour, both sugars, salt, and cold butter in a large mixing bowl. Using your fingers or a pastry cutter, tenderly work the mixture together until the butter is the size of small peas strewn throughout the dry mixture. Scatter the topping evenly over the apples.
- Place the crisp on a sheet pan and bake for 45 minutes or until the top is golden brown and the apple mixture is bubbly. Serve warm.
