VEGETARIAN BLACK BEAN CHILI

Ingredients
- 1 1/2 cups cooked black beans
- 1 cup canned crushed or diced tomatoes
- 1/2 cup diced sweet potatoes
- 2 garlic cloves, thinly sliced
- 2 scallions, thinly sliced
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon ancho chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/4 cup yogurt or sour cream
- Grated zest from 1 lime
Instructions
- In a medium saucepan, stir the black beans along with the garlic cloves, scallions, chili powders, and cumin. Stir in the crushed tomatoes and bring to a simmer. Cook for 10 minutes.
- Stir in the sweet potatoes and cook for 3 minutes longer until heated through.
- Mix the yogurt and lime zest. Serve with chili and chips.
