POACHED PEARS WITH WARM CHOCOLATE PEAR SAUCE

POACHED PEARS WITH WARM CHOCOLATE PEAR SAUCE

Ingredients

  • 1 cup pear nectar
  • 1 cup dry white wine
  • 1/2 cup granulated sugar
  • 1/2 vanilla bean, split
  • 1/2 teaspoon ground ginger
  • 4 ripe Bartlett pears - peeled, halved and cored
  • 4 ounces bittersweet chocolate, chopped
  • Vanilla Bean Ice Cream

Instructions

  1. Combine pear nectar, white wine, sugar, vanilla bean, and ginger in a large saucepan over medium heat until the sugar dissolves and the syrup comes to a boil. Add the pears to the syrup, cover the pan, reduce the heat to medium-low and simmer until the pears are tender about 10 minutes.
  2. Using a slotted spoon, transfer the pears to a plate. Increase the heat to high and boil the poaching liquid until reduced to 3/4 cup, about 10 minutes. Remove the pan from heat, add the chocolate and whisk until the chocolate melts and the sauce is smooth.
  3. To serve, place 1 warm pear half, cut side up, on each plate. Top with vanilla ice cream and warm chocolate-pear sauce.
