VEGETARIAN BLACK BEAN CHILI

VEGETARIAN BLACK BEAN CHILI

Ingredients

  • 1 1/2 cups cooked black beans
  • 1 cup canned crushed or diced tomatoes
  • 1/2 cup diced sweet potatoes
  • 2 garlic cloves, thinly sliced
  • 2 scallions, thinly sliced
  • 1 teaspoon chipotle chili powder
  • 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/4 cup yogurt or sour cream
  • Grated zest from 1 lime

Instructions

  1. In a medium saucepan, stir the black beans along with the garlic cloves, scallions, chili powders, and cumin. Stir in the crushed tomatoes and bring to a simmer. Cook for 10 minutes.
  2. Stir in the sweet potatoes and cook for 3 minutes longer until heated through.
  3. Mix the yogurt and lime zest. Serve with chili and chips.
