PROTEIN-PACKED PEANUT BUTTER BANANA MUFFIN

Ingredients

  • 2 large brown bananas
  • 1 cup Skippy creamy peanut butter
  • 2 large eggs
  • 2 tablespoons honey
  • 1 tablespoon water
  • 4 tablespoons vanilla protein powder
  • 1 tablespoon pure vanilla extract
  • 1 teaspoons baking powder
  • 1/2 cup carob chips

Instructions

  1. Preheat the oven to 400ºF. Place all of the ingredients except the chocolate chips in a blender. Blend the mixture until completely smooth, about 1 minute, scraping down the sides of the blender once during blending. Transfer the batter to a mixing bowl and stir in the carob chips.
  2. Grease a standard-sized muffin tin with cooking spray and spoon or scoop the batter into the muffin tins, filling the cups three-quarters full. Bake for 14 to 15 minutes or until the muffins have set.
  3. Cool the muffins completely, then store them in the fridge.
