RED & GREEN CHRISTMAS SALAD

This mouthwatering salad is vibrant with color and flavor.

Ingredients

  • 8 cups spinach leaves, stems removed
  • 3/4 cup dried cranberries
  • 3/4 cup pecan halves, toasted
  • 1/2 cup crumbled blue cheese
  • Warm Champagne Dressing (recipe follows)
WARM CHAMPAGNE DRESSING:
  • 1/4 cup champagne vinegar
  • 1 tablespoon honey or granulated sugar
  • 1 teaspoon Dry Vermouth
  • 1 teaspoon Dijon mustard
  • 1 tablespoon heavy cream
  • 1 cup good quality olive oil
  • Salt & pepper, to taste

Instructions

  1. Toss the spinach leaves, cranberries, and pecans in a large mixing bowl.
  2. Prepare the warm dressing. Toss the salad with enough dressing to lightly coat the greens and serve immediately.
  3. FOR THE DRESSING: Combine the vinegar, sugar, Vermouth, and mustard in a small saucepan. Bring to a simmer. Gradually whisk in the cream and the olive oil in a steady stream. Season with salt & pepper. Remove from the heat and dress the salad immediately.
