CARIBBEAN TURKEY SLIDERS WITH PINEAPPLE SALSA

Homemade Jerk seasoning livens up ground turkey in this low-fat slider.
Ingredients
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 1 tablespoon dark brown sugar
- 2 tablespoons freshly chopped cilantro
- Salt and freshly ground pepper
- 2 pounds of ground turkey
- 12 slider buns, Hawaiian rolls or onion dinner rolls, split
- 1 cup fresh arugula leaves
PINEAPPLE SALSA
- 2 cups fresh or 12 canned pineapple slices, drained & diced
- 2 green onions, sliced thinly
- 1 red bell pepper, diced
- 1/2 small red onion, diced
- 2 tablespoons freshly chopped cilantro
- 1 tablespoon freshly squeezed lime juice
- Salt and freshly ground pepper
JERK MAYONNAISE
- 1 cup mayonnaise
- 2 tablespoons store-bought Jerk Seasoning
Instructions
- Combine the dry spices and sugar in a small bowl and stir to combine well. Place the ground turkey in a mixing bowl and add the spice mixture. Add the cilantro and season the mixture liberally with salt and pepper. Using a 1/4 cup measuring cup, shape the mixture into 12 patties.
- Heat 2 tablespoons of olive oil over medium heat and add the burgers to the pan. Cook on both sides till cooked through. Remove the burgers to a plate. Place the buns, cut side down in the same pan, and toast the buns for about 1 minute or until golden.
- For the Salsa, combine the diced pineapple with the remaining ingredients in a mixing bowl. Season with salt and pepper and mix to combine well.
- For the Mayonnaise, whisk together the mayo and the Jerk seasoning.
- To assemble the burgers, spread the top and bottom of each bun with the Jerk mayonnaise. Top with a few leaves of baby arugula, a burger, and a spoonful of Pineapple Salsa.
