Ingredients
- 4 cups steel-cut oats
- 1/2 cup bran flakes
- 1/2 cup currants
- 1/2 cup coconut
- 1/4 cup dried cranberries or cherries
- 1/4 cup wheat germ
- 1/4 cup cornmeal
- 1/4 cup sunflower seeds
- 1/4 cup walnuts
- 1/4 cup whole almonds
- 1/4 cup corn oil
- 1/3 cup honey
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F.
- In a large mixing bowl, combine the oats, raisins, bran, coconut, cranberries, wheat germ, cornmeal, sunflower seeds, walnuts, and almonds. Add the corn oil, honey, and vanilla and toss to coat well.
- Spread the granola in a single layer onto cookie sheets, and bake until the granola is golden brown, about 45 minutes, tossing often.
- Allow the granola to cool and store it airtight.
