HOMEMADE PEANUT BUTTER CUPS

Just like the ’Reese’s Peanut Butter Cups’, but homemade! You will need 30 minis (1 3/4 by 1 1/4-inch) paper cups for filling.
Ingredients
- 2 cups milk chocolate chips
- 2 tablespoons shortening
- 1 stick unsalted butter
- 1/2 cup crunchy peanut butter
- 1 cup powdered sugar
- 2/3 cup graham cracker crumbs
Instructions
- Combine the chocolate chips and shortening in a small saucepan. Cook over low heat, stirring occasionally until the mixture is melted and smooth. Loosen the top paper cup from the stack, and place it in a pile with a few other paper cups for stability. Using a small paintbrush, coat the inside of the top cup evenly with about 1 teaspoon of the melted chocolate mixture. Bring the coating just to the top of the cup, about 1/8 inch in thickness. Repeat until all 30 cups are coated, then refrigerate the cups.
- In another saucepan combine the butter and peanut butter. Cook over medium heat, stirring occasionally, until melted. Stir in the powdered sugar and graham cracker crumbs. Press about 1/2 tablespoon of the filling into each chocolate cup. Spoon about 1/2 teaspoon of the remaining melted chocolate mixture on top of the filling and spread to cover. Freeze the Peanut Butter Cups until firm, about 2 hours. Store refrigerated.
