HOMEMADE PEANUT BUTTER CUPS

Just like the ’Reese’s Peanut Butter Cups’, but homemade! You will need 30 minis (1 3/4 by 1 1/4-inch) paper cups for filling.

Ingredients

  • 2 cups milk chocolate chips
  • 2 tablespoons shortening
  • 1 stick unsalted butter
  • 1/2 cup crunchy peanut butter
  • 1 cup powdered sugar
  • 2/3 cup graham cracker crumbs

Instructions

  1. Combine the chocolate chips and shortening in a small saucepan. Cook over low heat, stirring occasionally until the mixture is melted and smooth. Loosen the top paper cup from the stack, and place it in a pile with a few other paper cups for stability. Using a small paintbrush, coat the inside of the top cup evenly with about 1 teaspoon of the melted chocolate mixture. Bring the coating just to the top of the cup, about 1/8 inch in thickness. Repeat until all 30 cups are coated, then refrigerate the cups.
  2. In another saucepan combine the butter and peanut butter. Cook over medium heat, stirring occasionally, until melted. Stir in the powdered sugar and graham cracker crumbs. Press about 1/2 tablespoon of the filling into each chocolate cup. Spoon about 1/2 teaspoon of the remaining melted chocolate mixture on top of the filling and spread to cover. Freeze the Peanut Butter Cups until firm, about 2 hours. Store refrigerated.
