MEATBALLS MAKE ME HAPPY

Ingredients
- 2 slices white bread, crust removed
- 1/4 cup milk
- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 pound ground Veal
- 3 tablespoons sweet onion, finely minced or grated
- 2 garlic cloves, finely minced
- 2 large eggs
- 1/4 cup chopped flat-leaf parsley
- 1/2 cup cold water
- Salt and freshly ground pepper
Instructions
- Put bread and milk into a small saucepan and heat very gently, until the bread absorbs all the milk. Mash it to a pulp and leave to cool. Combine the ground beef, ground veal and ground pork in a bowl with the bread mixture and add the minced onion, garlic, eggs and chopped parsley. Slowly add the cold water until the mixture is moist. Shape into balls about 2-inches in diameter and place on a baking sheet.
- Bake the meatballs at 375ºF for 20 minutes, then broil for 2 minutes until golden brown. Place the cooked meatballs in marinara sauce to cover and cook for 30 minutes before serving.
