Made easy using just one pan, this sausage dinner is hearty, wholesome, and perfect for a quick weeknight family dinner. Serve with crusty French bread, for dipping.
Ingredients
- 2 tablespoons extra-virgin olive oil
- 8 Italian sausages
- 4 garlic cloves, peeled and crushed
- One (15-ounce) can of dice tomatoes
- Two (15-ounce) cans of cannellini beans, drained and rinsed
- 1/4 cup low-sodium chicken broth
- 2 sprigs of fresh rosemary
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large, high-sided skillet over medium heat. Add the sausages sauté to brown the sausages on all sides. Remove the sausages to a plate and add the garlic to the skillet. Sauté until fragrant, often stirring, about 2 minutes. Add the diced tomatoes with the juice, the cannellini beans, the chicken broth, and the rosemary sprigs. Season the mixture with salt and pepper. Add the sausages back to the skillet and simmer for 10 minutes.
