PAN-FRIED OYSTERS WITH SALSA VERDE

For Valentine’s Day sweethearts that like a little heat and fabulous flavor, these La Victoria Salsa-inspired oysters are sure to act as an aphrodisiac!

Ingredients

  • 6 oysters, shucked (reserve the bottom shells for presentation)
  • 1/2 cup French bread cubes, lightly toasted
  • Salt & freshly ground pepper
  • 1/8 teaspoon cayenne
  • 1 egg yolk, beaten
  • La Victoria Salsa Brava Hot Sauce, to taste
  • 2 cups Grapeseed or Olive Oil
FOR THE SALSA VERDE:
  • 1 cup La Victoria Green Taco Sauce (or your favorite green sauce)
  • A handful of finely chopped cilantro
  • 1 teaspoon lime juice
  • 1 teaspoon honey
  • Salt and freshly ground pepper

Instructions

  1. In a food processor, pulse together the bread cubes, salt, pepper, and cayenne until fine breadcrumbs. Whisk together the egg yolks with La Victoria Salsa Brava to taste. Dredge the oysters in the yolk mixture and coat in the breadcrumbs. Heat the olive oil over medium heat until just simmering (test it by sprinkling some crumbs into it; they should sizzle and come to the top) and add the coated oysters. Fry until golden brown, flip over, and fry until golden on the other side. They should cook for about 1 minute total. Drain on a paper towel.
  2. Meanwhile, mix together the La Victoria Green Taco Sauce, chopped cilantro, lime juice and honey.
  3. Put each oyster into a shell. Spoon the Salsa Verde over each fried oyster. Serve immediately.
