PANCETTA & HATCH CHILE PANINIS

This is a wonderful combination of salty pancetta, sweet mango, spicy hatch chiles and basil leaves.

Ingredients

  • 6 slices pancetta, sliced thin
  • 1 ripe mango, peeled and thinly sliced
  • 2 roasted Hatch chiles
  • 6 large basil leaves
  • 2 ciabatta rolls

Instructions

  1. Roast the slices of pancetta in a 400 degree oven for 10 minutes and let cool on a rack.
  2. Layer each sandwich with 3 slices of the pancetta, sliced mango, a roasted Hatch chile and a few basil leaves.
  3. Place into a Panini maker or a sauté pan and cook until crisp on both sides. Serve immediately.
