SPICY BLACK BEAN BURGERS

Ingredients

  • 4 cans black beans, rinsed and drained
  • 1/4 cup onion, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 teaspoon Cayenne pepper
  • 1/4 cup Egg substitute
  • 1 cup seasoned bread crumbs
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons olive oil
  • 8 Hamburger Buns
  • Salsa, for topping

Instructions

  1. Combine the beans, onion, bell pepper, cayenne pepper, egg, bread crumbs and cilantro in a food processor. Process, adding more bread crumbs as needed to make a mixture dry enough to form into patties.
  2. Shape into 8 patties and refrigerate for at least 1 hour before cooking. (Patties can be made a day or two ahead and refrigerated too!)
  3. Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Add 4 patties and fry 2 minutes per side, turning once. Add the remaining tablespoon of olive oil and the remaining 4 patties and cook until browned and heated through. Place each patty in a hamburger roll and serve with salsa, if desired.
