SPICY BLACK BEAN SOUP

I love this soup!
Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 3 garlic cloves, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 4 15-ounce cans of black beans, drained
- 6 cups chicken broth
- 1 14-ounce can of diced tomatoes in juice
- 1-2 teaspoons ground cumin
- 1 teaspoon hot sauce, optional
- 1-2 teaspoons lime juice
- 2 tablespoons unsalted butter, chilled
Instructions
- Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté until tender and caramelized, about 10 minutes. Add the thyme, cumin and oregano and sauté 1 minute.
- Add the beans, broth, tomatoes with juice, cumin and hot sauce. Bring soup to then reduce the heat to medium-low and simmer until flavors blend and soup thickens slightly, stirring occasionally, about 20 minutes. Remove the soup from the heat and stir in the lime juice and cold butter.
- Working in batches, purée two-thirds of the soup in a blender, until smooth. Add the pureed soup back to the pot and stir to combine.
