SPICY GRILLED PORK CHOPS WITH BALSAMIC PEACHES

Ingredients
- 4 thick-cut, bone-in pork chops
- 2 cups apple cider
- 2 cups water
- 1/3 cup kosher salt
- 1/2 cup granulated sugar
- 2 teaspoons Sambal chili paste
- 4 sprigs of fresh thyme
- 4 cloves garlic, peeled and smashed
- Olive oil
- 3 peaches, pitted and quartered
- 3 teaspoons balsamic vinegar
- 2 teaspoons granulated sugar
- Salt and freshly cracked black pepper
Instructions
- Rinse the pork chops and pat them dry.
- Combine the apple cider, water, 1/2 cup sugar, Sambal paste, salt, thyme and garlic in a large resealable plastic bag. Close the bag and shake to dissolve the sugar and salt. Add the pork chops to the brine and refrigerate for at least 4 hours or up to overnight.
- Fire up your grill, with one side of the grill on high and the other side on medium heat. Remove the pork chops from the brine and discard the brine. Pat the pork chops dry, drizzle with olive oil, and season with salt and pepper. Grill the pork chops on the hot side until marked with grill marks, then move the chops to medium heat and continue grilling until cooked through. Remove the pork chops from the grill, tent them with foil and let them rest for 10 minutes.
- Meanwhile, toss the peach halves with the balsamic and sugar. Grill the peaches flesh side down on the hot side of the grill for 3 minutes on each side.
- Top the pork chops with the peaches and garnish with fresh thyme.
