SWEET RICOTTA MOUSSE WITH FRESH BERRIES

A light and lovely Spring dessert, for the fresh berry season~

Ingredients

  • 12 ounces whole milk ricotta
  • 6 ounces mascarpone cheese
  • 1/4 cup granulated sugar
  • 2 tablespoons freshly grated orange zest
  • 1 teaspoon pure vanilla extract
  • 2 cups heavy cream
  • 1 tablespoon powdered sugar
  • 1/2 pint fresh strawberries, cleaned and quartered
  • 1 pint fresh raspberries
  • 1 pint fresh blackberries
  • Fresh mint, for garnish

Instructions

  1. Process the ricotta, mascarpone, and sugar in the bowl of a food processor until smooth and creamy. Transfer to a mixing bowl and stir in the zest and vanilla.
  2. Whip the heavy cream with the powdered sugar to stiff peaks. Stir a small amount of the whipped cream into the ricotta mixture to lighten it. Add the remaining whipped cream and gently fold together until well combined.
  3. Layer the mousse with the berries in 4 large wine glasses. Garnish with a mint sprig. Refrigerate up to 1 hour before serving.
