SWEET RICOTTA MOUSSE WITH FRESH BERRIES

A light and lovely Spring dessert, for the fresh berry season~
Ingredients
- 12 ounces whole milk ricotta
- 6 ounces mascarpone cheese
- 1/4 cup granulated sugar
- 2 tablespoons freshly grated orange zest
- 1 teaspoon pure vanilla extract
- 2 cups heavy cream
- 1 tablespoon powdered sugar
- 1/2 pint fresh strawberries, cleaned and quartered
- 1 pint fresh raspberries
- 1 pint fresh blackberries
- Fresh mint, for garnish
Instructions
- Process the ricotta, mascarpone, and sugar in the bowl of a food processor until smooth and creamy. Transfer to a mixing bowl and stir in the zest and vanilla.
- Whip the heavy cream with the powdered sugar to stiff peaks. Stir a small amount of the whipped cream into the ricotta mixture to lighten it. Add the remaining whipped cream and gently fold together until well combined.
- Layer the mousse with the berries in 4 large wine glasses. Garnish with a mint sprig. Refrigerate up to 1 hour before serving.
