TEQUILA-CHIPOTLE KETCHUP

Ingredients
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 4 New York strip steaks, rib-eye steaks, or filets
- 1/4 cup Tequila
- 1 cup ketchup
- 1 teaspoon ground cumin
- 1 teaspoon (or to taste) adobo sauce from a can of chipotle chilies
- 2 tablespoons honey
- juice of 1 lime
- Salt and freshly ground pepper
- 4 steak rolls or Kaiser rolls
- 2 cups baby arugula leaves
- 4 ounces of crumbled gorgonzola cheese
Instructions
- Heat the olive oil and butter in a large sauté pan or stovetop grill pan over high heat. Season the steaks with salt and pepper. Place the steaks in the skillet and sear until golden brown, then turn the steaks over and continue cooking to the desired doneness. Remove the steaks to a plate and keep warm.
- Return the pan to high heat and deglaze with the tequila. Add the ketchup, cumin, adobo sauce, honey, and lime juice and stir to combine. Add salt to taste. Cook for 1 minute, then remove from the heat.
- Slice the steaks. Spread steak rolls with homemade ketchup and pile with sliced steak. Top the steak with arugula leaves and crumbled gorgonzola cheese.
