TEQUILA WATERMELON COOLERS

When the summer season’s watermelon is prime and sweet, make these easy coolers for a refreshing toast!
Ingredients
- 1 cup water
- 1 cup granulated sugar
- 8 cups diced seedless watermelon (1 pound)
- 1/4 cup fresh lime juice
- 1/2 cup fresh mint leaves
- 1 1/4 cups silver tequila
- Ice
- Club Soda
- Lime wedges or wheels
Instructions
- In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved about 1 minute. Allow the simple syrup to cool completely, then pour it into a plastic bottle until ready to use.
- Using your blender, puree the watermelon until smooth. Strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
- In a large pitcher, combine 1/3 cup of the sugar syrup with the lime juice and mint leaves. Using a muddler or the back of a wooden spoon, lightly muddle the mint. Add the watermelon juice and tequila. Taste and adjust the sweetness, adding more simple syrup if necessary. Refrigerate until well chilled.
- To serve, pour the mixture into ice-filled glasses. Top each glass with a splash of club soda and garnish with lime.
