ROASTED PARSNIP & PEAR PUREE

Ingredients
- 2 pounds parsnips, peeled and cut into 2-inch pieces
- 1 large pear (Bartlett or Anjou) - peeled, cored and quartered
- 4 cloves garlic, peeled
- 3 tablespoons unsalted butter
- 1/4 cup crème fraiche
- Salt & freshly ground white pepper
- Fried sage leaves, for garnish
Instructions
- Preheat the oven to 375ºF. Toss the parsnips, pear quarters, and garlic cloves with olive oil and spread the mixture in a single layer on a silicone mat or parchment paper-lined baking sheet. Season with salt and pepper and roast until the parsnips are tender when pierced with a knife, about 20 to 25 minutes, stirring once during roasting.
- Transfer the roasted parsnips, pears, and garlic to the bowl of a food processor. Add the butter and crème fraiche. Process until completely smooth (allow the machine to run for at least 2 minutes). Adjust the seasoning and serve the puree hot. (To keep the puree hot for up to 1 hour, cover with parchment and set the bowl in a pan of barely simmering water.)
- Garnish with fried sage leaves.
