VANILLA BEAN ARBORIO RICE PUDDING

Rice pudding is only made better by using Italian short-grain rice and lots of pure, sweet vanilla flavor.
Ingredients
- 1/2 cup arborio risotto rice
- 3 cups organic heavy cream
- 1 cup water
- 1/4 cup sugar
- 1 vanilla bean, split in half & seeds scraped out or 2 teaspoons vanilla paste
- Pinch of salt
- Roasted and chopped almonds, for garnish
Instructions
- In a large saucepan, combine the rice, heavy cream, water, sugar, vanilla bean (seeds and bean itself) and salt. Bring the mixture to a boil over medium heat, stirring constantly to dissolve the sugar and to avoid scorching the bottom of the pan. Once the mixture comes to a boil reduce the heat to low and simmer the rice pudding gently for 45 minutes, or until the rice is cooked through but still slightly al dente.
- Remove the rice pudding from the heat, discard the vanilla bean, divide into 6 ramekins or small serving bowls and refrigerate until chilled.
- Garnish with chopped almonds and serve cold.
