INDIVIDUAL BAKED ALASKAS

Prepare these Alaskas entirely ahead of time and bake just before serving.

Ingredients

  • 6 individual sponge cakes, brownies, or 1-inch thick pound cake slices
  • 6 tablespoons frozen berries (mixed berries, raspberries, cherries)
  • 6 scoops ice cream (coffee, chocolate, strawberry….your choice)
  • 5 large egg whites
  • 1/2 cup granulated sugar
  • Pinch of salt
  • Chocolate Sauce for serving

Instructions

  1. Arrange the cakes on a large baking sheet. Spoon 1 tablespoon of the frozen berries into each cake. Top with a small scoop of ice cream. Place the cakes, in the pan, into the freezer. Next, beat the egg whites until foamy using an electric mixer. Gradually beat in the sugar and salt, beating until stiff peaks form.
  2. Remove the cakes from the freezer and cover each dessert completely with meringue. Spread meringue on all sides and form peaks using a knife. Be sure there are no gaps or air spaces. Return the desserts to the freezer for at least 3 hours or up to 2 days. (When the meringue on the desserts is frozen solid, you can wrap the pan with plastic wrap.) When ready to serve, heat the oven to 500°F. Remove the desserts from the freezer and place the pan in the oven. Bake for 3 to 4 minutes or until the meringue is light brown. (You can also use a blow torch to brown the meringue) Serve with warm Chocolate Sauce.
